Oven bottom muffins. the bagel of the North. These were baked by Keith Boyden using this recipe. Some more of Keith Boyden's work. This picture shows some of the thinner oven-bottom muffins. Note the bagel-like hole in the middle. These ones are like the fluffier commercial muffins, but are floury. Also they don't have a hole. Here are some wholemeal muffins. This is typical packaging. There's no labelling and no ingredients list, so there could be anything in there!

Parkin - the ginger cake of the North. Parkin (allegedly from Yorkshire, but just as tasty in Lancashire) is a traditional ginger cake made around Bonfire Night (November the 5th). It's one of those recipes that your mother or grandmother or a neighbour would make and take to the bonfire that someone had build in a nearby field (this was in the days before they invented Health and Safety and organised bonfires). What varies is the ingredients. 1 oz (28g) marg / butter / lard. 1/2 teaspoon ground ginger.
