Not all low fat since it was serving a horde but all were organic, and mostly local. Pumpkin Acorn Squash Soup. Easy seasonal soup with nutmeg and great toppings. 1 acorn squash- halved, seeds scooped out. 1 mini cooking pumpkin or 1 16 oz can of pumpkin. 1 medium white onion. 188; stick butter. 189; cup of cream or milk.

Tomatoes and Feta Salad. 1 ½ Cups broth or water. 1 Cup Diced Tomatoes ( Grape, Cherry, any smaller types). 1 Cup chopped parsley. 1 Loosely Cup of crumbled feta. 1 ½ Lemons- Juice (also can zest for even more taste). 1 Clove Garlic- minced. Combine all. Serve either warm, room temp or right out of fridge! Red Pepper, carrots, celery.

Fish: Lenten Easy Yummy and Perfectly timed Dinner. 1 lb Potatoes ( about 4 cups ) of Yukon Gold, or Red cut into 8ths. I leave skins on. Place Potatoes pieces in large pot and cover with cold water. 2 Fish Filets- I used wild caught cod but most would work here. 1 pint or so of grape or cherry tomatoes- cut in half. 2 Tbs Capers ( drained). 2 Tbs Red Wine Vinegar. 2 Tbs EV Olive Oil. 1/2 Tsp Ground Cumin (optional).
