A dash of salt and pepper. 50g ginger, shredded. 50g anchovies, rinsed. 3-4 tbsp sesame oil. 189; tsp salt. 188; tsp pepper. 1 tbsp light soy sauce. 188; tsp sugar. A dash of freshly ground black pepper. Deep-fry anchovies in hot oil until crispy. Dish out and set aside. Heat sesame oil in a wok and fry ginger shreds until fragrant and crispy. Recipe by Amy Beh. 1 onion, chopped. 3 tbsp olive oil. 275g risotto rice (arborio). 189; cup fresh shitake mushroom, chopped. 189; cup white wine. 900ml fresh chicken stock or vegetable stock. 2 tbsp chopped parsley. 50g Parmesan, freshly grated. Heat fresh chicken stock or vegetable stock in a saucepan to a gentle simmer. Heat olive oil and half the butter in a heavy-bottomed saucepan. Fry onion and bay leaves for 3-4 minutes until fragrant or softened. GHEE OR BUTTER RICE.
