Wednesday, September 21, 2016. Royal Eggplant (Baingan Bharta). Another recipe adapted from a recipe in. Cookbook by Neelam Batra (see also the diced potatoes and tomatoes. Recipe I posted recently). The original calls for 4 jalapenos - I used one large jalapeno, and we could barely eat it, it was so spicy! So this recipe reflects that cut :). 2 medium eggplants (1 pound each). 3 T Olive oil. 1 tsp cumin seeds. 2 tsp minced garlic. 1 T minced fresh ginger. 1 1/2 cups chopped onion. 1 cup chopped cilantro.

Sunday, July 10, 2016. We got a batch of bananas that wasn't so tasty, so I thought hey, why don't I try to sweeten them up a bit and fry them? A quick google search found a good recipe for fried honey bananas. That I adapted a bit. Photo courtesy of that recipe page, because we ate them too fast to get a photo! Saturday, March 5, 2016. I've made many veggie curries with Trader Joes bottled curry sauce, and they're okay, but never as good as what you get at a Thai restaurant. Once I tried to make curry with store-bought curry paste and coconut milk, but it was eh. What's the trick? Here's what I did. Blue Elephant Royal Thai Yellow Curry. 1 can coconut cream. 1 onion, chopped. 12 cups mushrooms, chopped. 1 cup cabbage, chopped. 3 small potatoes, chopped and nuked 4 min. 1 sweet potato, chopped and nuked 4 min.

Larry's sister Cyndy made this for us a decade or more ago, and then made it again for Thanksgiving this year, which reminded me how delicious it is! 1 C wild rice, dry. 1 C chopped walnuts. 1 C golden raisins. 1 large apple, cored and diced. 1-2 celery ribs, sliced.
