Sweet potato noodles are my new favourite thing – I just can’t get enough of them! 1 medium sweet potato. A handful of kale. 1 tablespoon of olive oil. 1 teaspoon of tahini. 1 teaspoon of pumpkin seed butter. 1 tablespoon of apple cider vinegar. Sesame and pumpkin seeds for sprinkling. Salt and pepper to taste. Keep stirring whilst the kale wilts and the noodles soften.
