Chocolate Chip Carrot Cake. 1 cup unsalted butter, at room temperature. 2 1/2 cups all purpose flour. 1 teaspoon baking soda. 2 tablespoons baking cocoa. 2 cups shredded carrots. 3/4 cup chopped nuts. 3/4 cup chocolate chips. Preheat oven to 350 degrees F. 1/4 cup butter, at room temperature. 6 to 8 ounces cream cheese, at room temperature. 1 teaspoon grated orange zest (orange part of peel). 2 to 3 tablespoons milk. Unfortunately our Founder and teacher Alan Hickman was diagnosed with cancer and it is now apparent he will not be teaching the 2013 classes. Therefore, classes are cancelled.
