The best ones taste so fresh, with crisp vegetables still vibrant with an inherent sweetness "from the vine" and tossed with a vinaigrette just before you eat it so that the vegetables are truly just dressed as opposed to saturated. 2 tab each minced parsley and green onion. 2 tab olive oil. 1 tab red wine vinegar.
