Food in the Limelight. Sunday, July 4, 2010. The secret to great Iced Coffee. I have 3 very simple rules with it comes to iced coffee. Start with a strong brew. (I prefer Stumptown or I. Cool the coffee first. My favorite rule: use coffee ice cubes instead of regular ones. Using regular ones dilutes the coffee, giving it a watered down taste. 1-2 cups coffee for the ice cubes. 1 glass full of cooled coffee. Pour 1-2 cups of coffee into a ice cub tray, freeze overnight. Add 3-4 cubes, enjoy!

Wednesday, 27 January 2010. New Year, New Horizons. Glen Rosa, Isle of Arran, Scotland. After about 20 years working in front of a PC screen, my body was telling me it was time to change. My knees were knackered; my back was buckled. I need a low-impact activity that exercised my whole body and was enjoyable enough to make me want to repeat the experience.
