When I found the Julia Child recipe for Chicken Waterzooi. 1 onion, diced. 2 leeks, cleaned and sliced. 2 large carrots, diced. 2 celery ribs, diced. Salt and pepper to taste. 4 chicken breasts (2-2 1/2 pounds), cut in bite sized pieces (1/2 in. by 1 in.). 4 to 5 c chicken broth (or 2 cans broth and extra water). 1 c heavy cream. 2 T white wine vinegar. 1 handful fresh parsley, chopped, for garnish.
