Monday, December 23, 2013. Here's a Lenten dish. That looks fancy but is easy to make, has a few simple ingredients and magically becomes more delicious as it sits in your refrigerator overnight. It is slices of sautéed eggplant rolled around a carrot, onion and herb filling, and it is so much tastier than it sounds. Try it!
