Greek Marinated Summer Vegetable Salad. June 28, 2015. Now that our garden is pumping vegetables out everyday it's time for some delicious salads. Here's an easy one and you can take out the cheese if you are vegan! It's also a quick, easy snack to munch on in between clients if you are a personal trainer. Enjoy! 1 tsp chopped fresh oregano 1/3 cup Greek dressing (add as much or as little of this as you want) 2 Tbl crumbled feta cheese Juice of a lemon Salt and pepper to taste Method of preparation.
