Fall has arrived and lately I’ve been craving butternut squash. To satisfy that craving, I tried my hand at a new soup this past weekend that incorporated both a hearty butternut squash and a couple sweet potatoes. Combined, the two vegetables make a high-vitamin, fiber-dense dish that’s also very tasty! 1 large butternut squash (1,050 gm. cooked weight*).

We use words like "Low- protein" and "Phe". We don't like to use the words "can't eat" instead we say "doesn't eat". Today Ryan and I had a little conversation during lunch. Does Ryan eat chicken? Does Ryan eat meat? Ryan eats low protein foods.". Ryan eats low protein because Ryan has PKU. Can you say PKU?
