Tuesday, 12 July 2011. Tiramisu with Macerated Summer Fruits. We ate a delicious lunch of local dried meats and a variety of pastas. Afterwards I introduced mum and Tim to affogato, one of my favourite light puddings (it's a scoop or two of vanilla ice cream or gelato drowned in an espresso - the perfect creamy end to a heavy meal). Our trip to Italy brings me nicely to one of my favourite desserts: tiramisu. I made tiramisu for the Daring Bakers before. On another note, look how much Arthur has grown!

Sunday, June 7, 2015. Sweet Caramel and Oat Slice. I must have got my baking mojo back this weekend. As well as having another batch of homemade muesli. Ready for the working week ahead, I've been busy baking my favourite lemon cake. This time done as a slice instead of a cake. I was on a roll by then and thought my daughter and her flatmates might appreciate a bit of homemade baking. Sweet Caramel and Oat Slice. Makes approximately 24 small slices. 385g tin sweetened condensed milk. 2 tbsp golden syrup.

Traditionally these would be topped with a walnut half, but the batch I made were being shared with the nut allergy sufferer, so I topped half with pieces of coconut chips (shaved coconut). The coconut goes well with the chocolate and I think gives a complementary look to the more traditional biscuit. Perhaps I could start a new trend? Makes about 16-18 biscuits depending on size. 200g butter, softened. 90g (1/2 cup) caster sugar. 1 tsp vanilla essence. 1 1/2 cups icing sugar.
