The O in alcohols are ignored when counting units of unsaturation. It acts as the H it replaced. When naming alcohols, you can either name it with the alcohol as the parent chain (with the OH group getting the smallest number), or with the carbon chain as the parent, with the OH groups as hydroxyls.
