October 22, 2014. Seeing that I love fall and fall foods, I decided to make a casserole with a fall theme and nothing says fall quite like pumpkin and sweet potatoes. I used 4 small-ish sweet potatoes, broccoli florets, baby spinach, vegetable medley that has corn, peas, carrots, and cauliflower, pumpkin soup, pumpkin puree, and reduced fat cream cheese. After the 15 minutes, the casserole had set a little bit more. I pulled it out and let it cool. It turned out really yummy! Let me know what you think!
