I made this exactly as per the classic Edgell recipe, but instead of canned beetroot I used 2 medium sized whole beetroot. I think using the fresh ones makes it a bit more moist, and added a lovely earthy flavour. The best thing about choc-beetroot cake is that it stays SO MOIST! 3 eggs, lightly beaten.
