Just a few of my favorite recipes. 2 cups frozen corn, thawed before hand or let thaw after mixing with all the ingredients. 1 jalpeno pepper (or 1/2 if you don’t want too much heat). 1 avocado, chopped. 1/2 cup papya or peach, chopped. 1/2 cup red pepper, chopped. 1/2 cup red onion, chopped. 1 1/2 tsp. cumin. 2 tbsp. olive oil. 2 tbsp. wine vinegar. 1/2 lime (juice only). 1 clove garlic, crushed.
