Vegetable Achard (pickled vegetables). November 19, 2013. 1 handful string beans. 2 teaspoons crushed garlic. 2 teaspoons crushed mustard seeds. 6 long red chillies. 2 tablespoons white vinegar. Slice all vegetables thinly. Boil water in a large pot and add salt then turn stove off. Put all vegetables except onion in water then take off immediately. Drain. They are often served as an accompaniment to main meals like curry, or eaten on their own with dhal poori. This chutney is fresh enough to perfectly complement a spicy meal – and ridiculously simple to make! It also acts as a palate cleanser if you’re eating several different dishes which are heavy on flavour, as most Mauritian food is! 1 small brown onion. 1 tablespoon white vinegar. 1 tablespoon olive oil. Gateau Coco (Coconut Cakes). December 3, 2013. 125g dessicated (grated) coconut. 1 teaspoon vanilla extract. 2 drops food colouring. 1 Heat the sugar and water in a saucepan on medium heat until a syrup forms. 2 Add the vanilla and food colouring. You can separate the mixture if you wish to make different coloured cakes. Mix in the coconut and stir gently until all the syrup is absorbed into the coconut. Polenta Pudding (Poudine Mais).
