American Journal of Clinical Nutrition 2010; 92: 759-765. 飽和脂肪酸の摂取が血液中の総 LDL- コレステロールの増加に働くこと、さらに血液中のコレステロールが非常に高い人では心筋梗塞になりやすいことは、これまでの研究でほぼ一致していますので、今回の結果から、 飽和脂肪酸をたくさんとればとるほどよい とは解釈するべきではありません。
