Five years bottle maturation on lees, before disgorging in July 2015, with minimal sulphite addition. Brut. ELEMENTAL SAFFRON CHARDONNAY 2015. A white wine made like a red wine natural. Ferment on skins matured in old oak barrels. Made with absolutely minimal additions. Matches with a huge range of foods.

Thank you to John and David Matthews. Natural ferment, 40% whole bunch, foot stomped, and matured in old French barrels for 14 months. No fining or filtration. Thank you to the Trist family. Natural wine, all Pinot Noir. Carbonic maceration for 9 days, then barrel fermented.
