Patty's Blog Of Stuff. Quinoa, Corn and Mint Salad. This recipe I found is another one of my favs and so easy! The few times I have made it, I have whipped it on Sunday, thrown it in the fridge, then Monday and Tuesday I take it to work for lunch. I cut the recipe in half when it is just for me and 2 days of lunch! I don’t even heat it up! I eat a few hours after being at work so it just sits on my desk looking at me till I indulge! I love it with some goat cheese sprinkled on it too! This is so easy!
