Rich, full, deep, almost buttery. Treat like olive oil in a salad dressing, especially a salad with bleu cheese and pears (pair with balsamic, red wine, sherry vinegars). Drizzle over pasta, mushrooms, roasted asparagus, roasted potatoes. Drizzle over goat cheese on a cheese platter. Pair with figs and prociutto - either wrapped and skewered, or wrapped and broiled. Drizzle with the walnut oil and honey. Sage and Wild Mushroom Olive Oil. Deep mushroom flavor, heavy herb flavor, a little goes a long way.

Monday, November 29, 2010. Thanksgiving Dinner Party - Part 3. Seckel Pear and Cinnamon Cream Tart. 1/2 pkg of puff pastry. Flour to roll out. 1 quantity of pastry cream. Made with an extra egg yolk. 1/4 cup maple syrup. 1 cup ruby port. 2 cups red wine. 1/2 cup brown sugar. Strain the liquid, bring back to a boil and reduce to about 1 1/2 cups, it should have a consistency of maple syrup. Preheat the oven to 375 degrees. Let cool before dusting with powdered sugar and drizzling with spiced port reduction.
