Monday, March 3, 2014. I love Sheppard's Pie, but usually it's very high in calories. But this one, though probably still higher in calories, it's on the lean side because of the Bison. 1 lb Bison ground. 6 medium potatoes boiled and mashed, I left the peel on. 4 medium carrots thinly sliced. 1 cup frozen peas. 1 medium onion diced. 2 cloves garlic diced. 1 cup red wine. 1 cup chicken broth. 1 tbsp. flour. 1/4 cup shredded parmesan. 1 tsp Black pepper. 1/2 tsp sea salt. 1 tbsp olive oil.

Small head of lettuce cut into chunks. 8-10 Small red creamer potatoes sliced in half. 2 Medium size carrots sliced. 1 cn Beef Broth low sodium. 1/2 tbsp virgin olive oil. 2 tbsp Land o Lakes butter and canola oil blend. Salt and Pepper to taste. Add oil to large fry pan. Add chunks of cabbage on medium to low heat. Stir off and on. Boil potatoes and carrots in broth until tender, drain. Monday, March 17, 2014. Cheesy spicy baked potatoes. I know today is St. Patty's day, so I probably should have posted something like corn beef and cabbage. However, potatoes are big. In Ireland, so I think it will do! Cheesy spicy baked potatoes. 2 med russet potatoes thinly sliced. 1 lg clove shallot chopped. 2 lg cloves garlic chopped. 1/4 lb grated white cheese of your choice (gouda, etc). 2 tsp virgin olive oil. Monday, August 19, 2013. Stir-fry after work style! One day after work I had a craving for stir fry over rice, not just white rice but ham fried rice. But I didn't want to take the time to do it the traditional way. Here is what I did, and it turned out dang good and was very easy. 1 tbsp Sesame Seed Oil. 1 tbsp Teriyaki sauce. 1/8 yellow, red, and orange bell peppers cut into strips and then halved. (Green if you have any would be good). 1/4 onion cut into rings then in half. 3 cloves garlic minced.

Monday, July 22, 2013. Idea for a quick summer dinner. It's hot here. And sometimes it's hard to come up with a dinner idea when you're just not that hungry because of the heat. I asked my husband if he wanted to go out and he said he'd rather grill something. But we still didn't know. Put fillets in a shallow dish and lightly cover with olive oil (4 fillets about 1 tbsp). Then sprinkle and rub in Cajun Spice (about 1 1/2 tbsp) (recipe below). Then grill. Easy. And low calorie. 1 tsp Cayenne pepper.
