VANKAYA DOSAKAYA MUKKALA PACHADI. 1Vankai/Brinjal/Aubergine - 3 Medium size. 2Dosakaya/Yellow cucumber - 1big. 7Salt - to taste. 8Tamarind paste - 1/2tbsp. 2Mustard seeds - 1/4tsp. 3Urad dhal - 1/4tsp. 4Chana dhal - 1/4tsp. 7Dry red chilli - 1. 2Peel cucumber and scoop out the seeds.Cut into small pieces. 3Grind brinjal pieces,tamarind paste,green chillies,salt,garlic,and 1/8th cup of cucumber slices to the brinjal mixture and grind into rough texture. Milk- - - - - - - - - - - - 1 to 1-1/4 cup. Sugar- - - - - - - - - - - -1/2 to less than 3/4 cup depends. Saffron- - - - - - - - - - -two big pinches (optional). 1Take tsp of ghee in a microwave safe bowl and microwave for 1 minute or till ghee melts. 2When the ghee has melted add 2 cups of dessicated coconut and mix thoroughly with a spoon.
