Purple Yam Cutlets Recipe. This time it was another ugly present, ratalu or purple yam. It is about as ugly as the chena. It also has a dark brown skin, similar to a potato but darker and about two times the size. My gift weighed 12 ounces. When I cut into this thing, I was awed at the beautiful purple color inside.
