Black Bean, Corn and Avocado Salsa. 1 can black beans, rinsed and drained. 2 c corn kernels (fresh or canned shoepeg is great). 1 pint cherry tomatoes, halved (I used grape tomatoes). 1 avocado, chopped. 1 jalapeno pepper, seeded and minced (optional). 1/4 c fresh lime juice. 2 t grated lime zest. 1/4 c chopped fresh cilantro (optional). In a small/medium sized bowl, put two yeast packages and lukewarm water. Sprinkle some of the 1/3 cup of sugar into the yeast to help it rise. In a large bowl, put shortening, sugar, salt, and boiling water. Break up shortening with spoon so it melts a little easier with the boiling water. Will not be completely melted.
