Ever get one of those weird moments, when you’re just kinda sitting there minding your own business, everything is fine and peachy, you might even be doing something really enjoy doing. And then everything just kinda stops? Maybe it’s an early sign of depression? But I don’t feel depressed. Maybe I’m just tired? Let’s try lying down on the bed for a while. The insides of my ears feels itchy. Maybe I’ll grab another cup of water.

February 22, 2010. 2 onions, halved. 4 nub of ginger, halved lengthwise. 5-6 lbs of beef bones. 6 quarts of water. 1 package of Pho Spices [1 cinnamon stick, 1 tbl coriander seeds, 1 tbl fennel seeds, 5 star anise, 1 cardamom pod, 6 whole cloves – place in mesh bag]. 1 1/2 tbl salt. 1/4 cup fish sauce. 1 inch chunk of yellow rock sugar (about 1 oz). Cooked beef from the broth.
