No pretension. Just good beer. Finally. The Sun Blackened Indian Black Ale. 8 lbs Pale 2 Row. 1 lbs Black Patent. 1 lbs Vienna Malt. 5 lbs Whole Wheat. 1 oz Galena [45 min bitter]. 1 oz Cluster [30 min bitter]. 1 oz Centennial [15 min flavor]. 1 oz Cascade [dry 7 days]. Mash temp was 155 degree at start. Mashed for 1 hour. Sparged at 170 degree and let sit for 15 minutes. Steeped Black Patent for 20 minutes at 150 degrees to gain color with out too much flavor change. 30 min left added second bitter hops.

Just good beer. 6 lbs - 2 row pale. 3 lbs - light wheat. 5 lbs - whole wheat. 12 oz - honey malt. 1 lbs lightly salted peanuts. 1 oz - sterling hops [bitter]. 1 oz - sterling hops [flavor]. Apt 12 yeast harvested from the bottle. 5 lbs Texas honey. Added 165 degree water to acheive a 155 degree medium in mash. Mash contains only the grains. After steeping for 40 minutes added in peanuts I crushed by hand. Let rest for another 20 minutes. Cycled then added 185 degree of sparge water. This i...

I can't make stuff like that up. Either way it adds 2 to 3 hours to the total brew time, which is already a 4 hour process.
