I used burrito sized tortillas, so it did not make 8, but that's to be expected. This recipe comes from Pioneer Woman. And is her take on Sonic's breakfast burrito! In fact, I ate it all by itself for lunch one day. We used it as a side with Mexican pizzas and in burritos for breakfasts and dinners. And SUPER easy to make- you don't even have to get the mixer out! This recipe is from Smells Like Home. 1 1/2 cups mashed, very ripe bananas (about 4). 1/4 cup firmly packed light brown sugar. 1/2 cup (1 stick) unsalted butter, melted. 1/4 cup whole milk. 1 1/2 cups all-purpose flour. 1 teaspoon instant espresso powder. 1 1/2 teaspoons baking soda.
