Easy and quick—one of my new favs! 3 C shredded zucchini. 8226; 3 T shredded Parmesan Cheese. 8226; 2 small tomatoes, halved and sliced thinly. 190; C egg or 2 eggs. 1/3 C all-purpose flour. 189; C chopped onion. 189; C julienned green pepper. 8226; 1 t dried oregano. 8226; ½ t salt. 8226; 2 C shredded mozzarella cheese. 8226; ½ t dried basil. In a bowl, combine zucchini and egg. 8226; 1 T sugar.

Recipes and information for enjoyable and nutritious cooking. A whole lot of fun for your mouth! July 30, 2012. Peel 2 cucumbers, chop off the ends, and halve them lengthwise. Use a teaspoon to scoop the seeds out, discard. Chop the cucumber into irregular bite size chunks and place in a bowl. Season with a good pinch of sea salt and ground black pepper. Add 6 T of extra virgin olive oil & 2 T of lemon juice and mix well. Roughly chop a few sprigs of fresh mint, add them salad and toss together.
