The main flock has changed slightly over the years; we now have Speckled Sussex, Cuckoo Marans, Exchequer Leghorns, Gold Laced Orpingtons and Brahmas to go with the Araucanas and the last remaining Welsummer. There were hives where we currently have ours as far back as anyone around can remember. We use three varieties of pears to make single varietal Perries: Oldfield, Brown Bess and the marvelous Teddington's Green, the original badger resistant, litter-fruit, which when worked to Perry loses its harshness and tastes wonderfully smooth, naturally sweet and complex. Chris's cross/tourer bike is now his main transport for local journeys.
