We have a cook ,who's name is " Murugan Anna. As it is served for marriage occasions. Sodhi goes very well with ginger thuvayal and potato curry (Urulai kaara kari) . Biriyani Kathirikkai - Muslim's Style / Brinjal in tangy gravy - Best accompaniment for biriyani. 1Small eggplants - 8. 2Tamarind extract - 1 cup. 3Sambar pwdr - 1 tsp. 4Turmeric powder - a pinch. 5pepper corns - 1 tsp. 6Oil - 1/4 cup. 7Jaggery - 1 tsp. 8Salt - to taste. 9Curry leaves - few. 1Peanut - 1 tsp. 2Sesame seeds - 1/2 tsp. 3Methi seeds - 1/4 tsp. Dry roast the peanut,methi and sesame seeds.Grind it into a powder. Wash and dry the brinjals. Add the jaggery to the curry.

Here I am giving u some tips,which I came to know in the process of learning and also from our seniors. While boiling peas,potatoes, don't put salt before it is cooked.Bcoz this will make its skin to get peeled off and give them a mashy,look. While preparing sweets like kesari,payasam,kheer, add a pinch of salt.This will enhance the sweetness to the dish.
