I remember I used to make this dish once a month after I learned how to make it. It is a simple dish with only six main ingredients. The good thing about this dish is that it is very tasty at the same time easy to make. The preparation is easy and cooking is straightforward. I call it Eggplant with Chinese Sausage.

It was beach weather. That kind of weather makes it perfect to drive south of the City. The place we had in mind was none other than Santa Cruz. We relaxed by the beach with a cold beverage and then we went to Santa Cruz downtown in the afternoon for a nice stroll on Pacific Ave. It was a perfect Santa Cruz beach day.

I also enjoy going to bakeries and get a whiff of oven fresh aroma. San Francisco has lots of supply of bakeries and one of my favorites is Pan Lido. We go there to get our Salvadorean bread fix. From a few feet away from the door, I could smell the sweet aroma of freshly baked breads. In Mijo's native tongue, a bakery is called.
