Saint Patrick’s Day is right around the corner so to celebrate the lively culture of Ireland and their day of feasting, I donned my apron and took on this amazing dish. It’s a relatively easy recipe with a mouthwatering outcome, hats off once again to our favorite corner of the world, the Emerald Isle! Yields 2 8″ potato pies. 8 slices of Bacon (cut in small chunks). 1/2 Red onion (finely chopped). 1/2 c Heavy whipping cream.

Recently I’ve taken some time to ‘unplug’ a bit, not necessarily because I wanted to refrain from using technology but because I needed some quiet time to listen and flow with the changes occurring in my life. Sometimes I find myself stumbling upon a metaphorical lookout point, a breathtaking place where I perch alone to observe the environment within as I question my intention and niche in the landscape. Am I being pure in my manifestation? What is my purpose? Am I grounded in the present?
