In honour of Cinco de Mayo, I made a deliciously simple and flavorful dish that, although stems from spanish roots, is sure to please on this lovely day of Mexican Independence. The mini calls it "brinner"(dinner in the form of breakfast) but I just call it delicious. 1 tablespoon olive oil. 5 medium eggs (or 4 large). 3 medium green bell peppers. And chop garlic,. Next chop the bell peppers,. And the tomatoes,. Between 5-8 minutes, until egg is set. Serve.

Friday, April 30, 2010. Beer-Braised Sausage and Potatoes. I can say with all honesty that my mini is a meat-and-potatoes kind of gal. This is out of character for me, as I had always been a poultry-type of kid growing up. needless to say sausage, steak, and meatloaf are requested very often at suppertime. The only other suggestion I would make would be to use only your favorite italian sausage; we're fortunate to have a local Italian shoppe. 3 tablespoons extra-virgin olive oil. 1 package italian sausage.
