I made a carrot cake that was previously made in Italy for Easter without measuring devices, beaters, or food processors, and I must say it was a lot less time consuming. It is the best carrot cake ever, even though it is not a Paula Dean recipe! My grandparents are here for a couple of days, so that seemed an occasion for cake. I love dried ficchi.
