Thai Chicken and Rice. 1 1/2 lb chicken cut into 1/2 inch pieces. 1 red bell pepper, cut into short thin strips. 1 cups chicken broth, divided. 1/4 cup soy sauce. 1/4 cup lime juice. 3 cloves garlic, minced. 3/4 tsp red pepper flakes. 1/3 cup creamy or chunky peanut butter. Thursday, February 26, 2009. 1/2 C fresh lime juice (3 to 4 limes, key ingredient). 1/4 C soy sauce. 1/4 C canola oil (I don't know if I use this much, I doubt it. I usally always cut oil a bit). 2 t minced garlic. 1-1/2 t. chili powder. 6 chicken thighs (I use breasts). 8 sm corn tortillas. 1-1/2 C. shredded Monterey Jack or cheddar. Salsa, guacamole, sour cream, cilantro, green onions. Slow Cooked Asian Chicken.
