It's easy to throw together if you have some leftover chicken or just use a rotisserie from the store. That's what I did! Enchiladas Especiales Tacuba Style. Wednesday, August 20, 2014. This is kind of a riff on Enchiladas Suizas but with avocado instead of tons and tons of cheese to lend the richness. This is a pretty quick recipe to put together and yields very good results. The filling is nice and creamy and hits that comfort food spot and the kids love it. 2 cups heavy cream (can sub half and half, but I wouldn't use milk). 1 cup chicken broth. 1 cup fresh cilantro, unpacked. 2 cloves of garlic. Juice of one lime. 1/4 teaspoon kosher salt, or more to taste.

I found this nice recipe for a shrimp curry soup that called for some prepared tomato soup, so I decided to make some soup before making a different soup. Regardless, this turned out really good so I thought I'd just post it separately as to not be super confusing. Creamy Classic Tomato Soup. 2 tablespoons unsalted butter. 1 medium onion, medium dice. 2 medium garlic cloves, minced or pressed. Pinch of red pepper flakes (optional). 1/3 cup heavy cream.

Tuesday, January 13, 2015. Parisian Gnocchi with Pea Pesto. I've made gnocchi a bunch of times. There are basically two different kinds that I do. Potato and the French style using pâte à choux. The potato gnocchi are more common in that you can buy them at the store and those are, admittedly, not terrible. Albeit a bit more dense than homemade, but not bad at all. The homemade ones are far superior in flavor and texture. Parisian Gnocchi with Pea Pesto. 1 cup (8 ounces) water. 1 tablespoon Dijon mustard.
