Monday, December 22, 2014. Nestle Toll House Chocolate Chip Pie. I'll start by saying - not healthy! And a little indulgence every once in awhile is ok. Plus, it's almost Christmas.and that sort of makes it ok. You're with family, and you're gonna indulge. It's only human. I make this pie every Thanksgiving and we have it at Christmas too. Thursday, April 30, 2015. I don't know about you, but I can't get enough banana bread. I always have bananas in the freezer so I can make it whenever I like. This 'clean' version has quickly become a favorite in our house and I don't even think the kids noticed the difference in taste when I cut out the refined sugars! Since I make banana bread a LOT, I do try to mix it up a little with different flavors or add-ins. I loved this oat version - and really thought it came out so pretty! 1/4 cup coconut sugar.

Friday, May 29, 2015. I didn'tstart cooking with eggplant until about 3 weeks ago. I remember one time I tried to make it years ago and it was mushy and just.yuck. But I've learned a few things since then and thought I'd revisit it. Now my husband and I are kind of obsessed. So far, I've made Eggplant Parm (recipe coming! Twice and we have grilled AND roasted it. Yes, all in 3 weeks. Obsessed! We love it. My one-year old also loves it. My 3 and 5-year olds? Not so much.but I've tried! 1/3 cup olive oil.

And ways that my kids will eat their veggies without me having to drown them in some sort of cheese sauce (or bribe them). So far, the one way that we ALL seem to love our veggies is roasted! 2 big or 3 smaller heads of broccoli. 1/4 cup olive oil. 3 cloves of garlic, minced. Pinch of red pepper flakes. Thursday, February 26, 2015. Strawberry Banana Baked Oatmeal. OMG - possibly my newest favorite breakfast. Dare I say even better than the Blueberry and Almond Baked Oatmeal. I posted a few weeks ago? The strawberries and bananas go together so well - and that touch of chocolate is amazing. The almonds add crunch and just overall, I'm pretty obsessed with this dish.
