Tuesday, August 9, 2011. 15 cups raw buckwheat groats, presoaked overnight. 1 cup whole coconut milk. 1/4 cup real maple syrup. 1/4 teaspoon unrefined sea salt. Grapeseed oil for cooking. Optional: chocolate chips (Enjoy Life), wild blueberries or raisins. Combine dates, milk, maple syrup, salt and vanilla and blend until smooth. Add pre-soaked buckwheat (and egg, if you are making them with eggs) and blend until smooth once again. Add chocolate chips, blueberries or raisins. If you do not have a Vita-Mix.

Paired with hot chocolate (coconut milk, raw cacao, raw honey, sea salt and vanilla), these grain-free muffins quickly became my kids' all-time favorite after school snack for blistery winter afternoons. 1/2 cup maple syrup. 1/2 teaspoon baking soda. 1 teaspoon apple cider vinegar. Preheat oven to 375 degrees. Place all ingredients into food processor. Blend until well mixed. The batter will be sticky. Mix in chocolate chips by hand.
