March 11, 2015 3:51 pm. A friend of ours gave us a bag of fresh shredded coconut and I was excited to be able to use it! It was a no brainer for me to make coconut shrimp not because it is one of my favorites to eat but it’s one of the easiest to make. This simple dish can be made in a flash because shrimp doesn’t take too long to cook. It is great as an appetizer serve this along side a thai sweet chili sauce as well as a main dish with rice. Sweet Thai Chili Sauce. Vegetable Oil (enough for frying).
