Wednesday, March 28, 2012. Tim, the hubby, does not usually like cold salads. We're talking about potato salad, chicken salad and pasta salad. Needless to say, when we have hamburgers I'm a little limited on side items - did I mention he's not a baked bean fan either. 1 Box Multi Colored Rotini. 1 Block of Pepper Jack Cheese (cubed). 1 Bag Mini Pepperonis. Sunday, March 20, 2011. Tim’s Texas Tavern Trip. If you are from Roanoke, you definitely know about the Texas Tavern. Texas Tavern is Roanoke's own little episode of Diners, Drive-Ins and Dives; most would classify it as a tasty dive. It has been a Roanoke novelty since the 1930's, and not much has changed in the last 80 years. The "tavern" specializes in hot dogs, hamburgers and chili. You can order any of these three staples with onions, mustard, relish and/or a fried egg! Just don't ask for ketchup.

Friday, July 29, 2011. Usually by this point in the summer I have read a number of books, but unfortunately this summer I have only one to review. However, I'm glad this was the one book I was able to read. I Know This Much Is True," Wally Lamb. At first glance, this book doesn't exactly jump out as an exciting summer read. The cover doesn't allude to much and the book is rather bulky at 900 pages. But, as the saying goes, don't judge a book by it's cover. I also look forward to reading more by Wally Lam...

Saturday, April 23, 2011. St Patrick’s Day Recipes (Successes and Busts). And hopefully I'll be posting more frequently, but I can't make any promises as wedding plans are officially in full swing. Between showers, girls-beach weekend and DIY weekends the next few months are packed full (oh, and that whole work thing too). Now to St. Patrick's Day…. I decided to make Green Enchiladas and a Green Velvet Cake. The enchiladas were a hit, but I felt the cake was a bust! 1 can of Rotel. Bake at 350 for 20 mins.

Sunday, February 19, 2012. I hate that it's been so long since my last blog post, but life has just been busy. Here is a quick snapshot of my life lately: developing, scheduling and meeting on multiple IEPs, graduate school readings and classes, and, of course, the regular day-to-day responsibilities around the house. I was told to not make any plans after school on Thursday (16th) and to come straight home. Once I got home we hit the road. We headed north on I95 and 2 hours later we were in Richmond!
