This recipe comes from The Complete Italian Vegetarian Cookbook. 1 large fennel bulb (about one-and-a-half pounds). 1 medium red onion, cut into 8 wedges. 2 medium carrots, peeled, halved lengthwise and cut into 2-inch lengths. 2 Tbsp extra-virgin olive oil. 1 Tbsp aged balsamic vinegar. Cheese Cake (no crust). This is from Mom's recipe box. 3 8 oz packages cream cheese. 16 oz sour cream. About 1/4 cup sugar - just enough to sweeten. Preheat oven to 325 degrees. Put all cake ingredients in bowl. Beat with electric mixer until smooth and thick. Pour into lightly greased 9" spring-form pan. Bake for 45 to 50 minutes. Remove from oven and place on rack. Ok, I got on the kale bandwagon, but this salad is really easy and really good! Wash and chop 1 bunch kale. Toss generously with dressing (below). Toss a handful of coarse breadcrumbs on top.
