 Seasoned Thoughts

I’ve been working in a professional kitchen for just over a year now. In my time as a pro-cook I’ve been in and out of 4 kitchens; not because I’ve jumped from one job to another but because of stages (working in another kitchen on a volunteer basis to experience their food and daily operations). Excess at its finest. In the past years Foie and its relatively niche industry has been under attack for its believed cruelties to ducks and geese.  Seasoned Thoughts: January 2009

http://seasonedthoughts.blogspot.com/2009_01_01_archive.html

Order Up, One Education! Cook vs. Chef. I was fortunate enough to work with a great photographer, Stacy Weber. Stacy emailed my Program Coordinator. Asking for a culinary student to help her style food for an assignment. The Coordinator then forwarded the email to the students enrolled in Culinary Management. I emailed her back with some of my food photos and we paired up to work on a project. My first week of school has come and gone and I can safely say that I'm no worse for wear. There's something bea...

Technique, Talent and Luck. Technique, Talent and Luck. A group of my close friends are artists; I've been friends with them for years and we will likely remain friends for the years to come. Even though they're artists and practitioners of a different craft we still have much in common to talk about. My friend German, who's devotion to art rivals my devotion to cooking, is one who I sometimes have the best conversations with. We often talk about technique, skill, the learning process and. http://seasonedthoughts.blogspot.com/2008_09_01_archive.html

I've seen both schools, considered my options, made a decision and am now following through. I've accepted my offer of admission to Humber College for the 16 month accelerated Culinary Management program beginning January 2009. It feels good to have finally made a decision about school and know where I'll be begin as a cook. The curriculum outline for the Culinary Management Program is as follows. Semester 1 (27 hours/week). CULN 115 Nutritional Theory. CULN 118 Business and Career Management. CULN 840 A...

 Seasoned Thoughts: May 2008

http://seasonedthoughts.blogspot.com/2008_05_01_archive.html

I come from an ice cream eating family. We've cut back on our consumption in recent years but prior to that we would always have at least 3 or 4 tubs of ice cream in our large freezer. My father loves his ice cream and my sister loves anything decadent; unfortunately for my sister she's also lactose intolerant. Two years ago I purchased my own ice cream maker. Ever since my first Japanese dinner I've been a giant fan of Green Tea. Black Pepper Ice Cream? Or should I try to imitate Chef Heston Blumenthal.

 Seasoned Thoughts: April 2008

http://seasonedthoughts.blogspot.com/2008_04_01_archive.html

I love the smell of rot in the morning. Cuts, burns, scrapes, and scars are part of working in a kitchen. Injuries are pretty common in the kitchen; sharp knives, hot stoves, steam, oil, cookware, and more are all hazards. Every movement in a kitchen should be done with a sense of urgency. Movement is never rushed even though it may look that way. Everything is achieved through precise focus or innate instinct. The white chef coat. Thermometer sleeve pockets, and double breasted. I work in a corporate of...

cooking is sexy: cheddar cheese risotto

http://cookingissexy.blogspot.com/2008/05/cheddar-cheese-risotto.html

Friday, May 30, 2008. I've never made risotto. i've heard of it, tasted it once, seen emeril make it on his show, but never prepared it myself. first of all, it took me a few trips to the grocery store to find it. the first time i printed off a recipe from food network, went looking for the ingredients, and found everything except arborio rice! Printed in the minneapolis star tribune (date unknown),. Adapted from "nigella express" by nigella lawson. 1 tbsp vegetable oil. 1 1/2 cups arborio rice. I didn't...

cooking is sexy: salad days

http://cookingissexy.blogspot.com/2008/05/salad-days.html

Friday, May 30, 2008. Salad is one of my favorite dinners during warm summer months. salad, a glass of wine maybe, ahh, perfection. it's an awesome way to showcase locally grown produce if you like farmers markets or garden. if you prepare the lettuce ahead of time, you can have dinner ready in minutes on days when it's just too hot to cook. Dressing can be a simple vinaigrette or even just a drizzle of some good olive oil, but i prefer creamier stuff. i used this recipe. Food blogs i read. Friends, fami...

cooking is sexy: December 2007

http://cookingissexy.blogspot.com/2007_12_01_archive.html

Wednesday, December 26, 2007. Not a real update. Well I survived Christmas. My mom has some AA batteries that I am stealing so I can finally start updating with not-gross pictures! Which is good because I have a lot of material I would like to update about. I made Never Bashful's bacon chocolate chip cookies and they were a big hit at my family's xmas eve celebration. And my mother got me a hand-held mixer! Act surprised on Monday, alright? Links to this post. Tuesday, December 18, 2007. I don't eat fish...

cooking is sexy: February 2008

http://cookingissexy.blogspot.com/2008_02_01_archive.html

Thursday, February 14, 2008. While i do have a healthy amount of *azn pride* i don't always feel authentically asian since i'm an adoptee. although i have been back to my birth country, met my birth family, and have done other culturally reaffirming activities, i still lack a lot of knowledge about, well, everything korean. A while ago i found a korean cookbook and flipped through it. i figured manduguk (dumpling soup) couldn't be too difficult so i gave it a shot. Links to this post. From a sweet fantasy.

cooking is sexy: November 2007

http://cookingissexy.blogspot.com/2007_11_01_archive.html

Friday, November 30, 2007. I guess I want to keep this mostly about culinary adventures. I'm considering going to school to become a patissier so this would be a fantastic way to keep track of my progress. Since I also have other domestic / crafty tendencies I may post about that on occasion. Also, can someone tell me about blogcarnival? I don't really understand what it is, but it seems cool? The Seasoned Table | Exploring Food and Faith Through the Liturgical Year

Exploring Food and Faith Through the Liturgical Year. A slice for ordinary and extraordinary time. After Ignatius was born last September, during the early days cocooning inside as a new family, we were overwhelmed with gifts of food and homemade meals. Among the generous friends, neighbors, acquaintances and family, 2 lovely friends dropped in for cuddles and brought with them this delicious slice (and recipe) – aptly named. Might make these little treats more palatable to all present. 1 cup rolled oats.
