炒飯は火力と量のバランスがとても大事。火力が負けると水分が飛ばずにもっさりとした仕上がりになる。もちろん長粒米を使えばぱらっとはするけど、日本米のふっくら感は出ない。長粒米には別の調理法が必要。 今までいつも3合炊いて3種類、1合ずつ作っていたが、今日からちょっと量を増やして4合。これは去年導入した相棒がだいぶ慣れてきて、もう少し分量が行けそうな感じがしたから。 その相棒とはこれ。Lodgeのダッチオーブン7Qt。鉄鋳物のどでかい鍋。直径は30cm、深さも12cmもある。動かすときに腰にきそうなくらい重い。その重さがすごい熱容量となってハロゲンの頼りないレンジでも、しっかりした火力を発揮する。 第2弾は豚とエビのミックス炒飯。豚は煮豚を細切れにしたもの。あとは生椎茸。 第3弾は豚とキムチ炒飯。いつも3つ目はバリエーションを試している。キムチとコチュジャンで少しぴりっとした味に。 正確には重量ベースで水加減をした方がいいのだそうだ。その場合は総重量が釣り合うように、水の量を調整するのかな? さて、前回の煮豚はなかなか良くできたので、再チャレンジ。 この時は180度F の3時間くらいで良い感じに調理できる&...
