For my bread I’m adding 250g rye with 500g water and leaving for a day…. I then make up the dough as follows:. 750g starter (250g rye and 500g water). 750g white bread flour. Sourdough starter No.2, day 2. March 28, 2013. Yesterday: 25g rye, 50g water. Today: add 25g rye, 50g water. Now it’s starting to look like it’s alive! A few more days and I can start cooking with it.
