Not much can be done with one parsnip and one potato. Slice the potato/parsnip very thinly. Lightly oil a microwaveable dish and lay the slices flat in a single layer. Since my last blog I have been busy baking for Glasgow, for where I won the Small Producers bursary to exhibit for free, and since then it has been hectic.
