It makes a fantastic healthy vegan centerpiece dish during the holidays. This dish can be made in advance and refrigerated; it reheats well. Makes 10 cabbage rolls. 1 cup cooked brown rice. 1 cup canned garbanzo beans, rinsed and drained. 1 cup oat bran. 1/4 teaspoon onion powder. 2 tablespoons soy sauce. 2 tablespoons Dijon-style mustard.

And no one will believe that there's no dairy, butter, or evaporated milk in here. It can be a bit soft, though, especially if you add the optional marshmallow fluff, so keep it well refrigerated. This is the exact version I made today. 2 tsp vegetable oil. 1 onion, chopped fine. 1 green bell pepper, chopped. 5 small carrots, sliced. 1-14 oz. can petite dice tomatoes. 2 large vegetable bullion squares. 5-6 baby red potatoes, quartered, sliced and rinsed. 1-14 oz. can navy beans (including liquid). 1/4 tsp each marjoram, ground thyme and garlic powder. 1/2 tsp. agave syrup (sugar would be fine). Freshly ground black pepper. 1 cup cooked rice. That looks good AND healthy!
