I started with brown rice and pinto beans, then added some chopped tomato and avocado, sprinkled some organic cheddar cheese, and topped it off with a tablespoon of sour cream. This is a very healthy meal containing fiber ( brown rice and beans ), antioxidants ( veggies ), and heart healthy fat ( avocado ).

The fish was seasoned with butter (earth balance), garlic, and oregano and baked over potato slices. I added tomato slices and Kalamata olives the last ten minutes of baking.
