Friday, February 26, 2016. Pumpkin Chocolate Chip Muffins. Again another variation of the Sweet Bread/Muffins Recipe. This time I experimented with reducing the oil and with using tapioca flour in place of the pudding mix. I liked the results and both Matt and Jessica said they were really good muffins. 3 eggs, beaten. 1/2 cup tapioca flour (also known as tapioca starch). 1 tsp pumpkin spice OR 1/2 tsp ground nutmeg, 1/2 tsp ground cloves, 1/4 tsp ground ginger. 1/2 tsp baking soda. 1/2 tsp baking powder.

Tuesday, August 16, 2016. This is a variation of my waffle recipe that I created one evening to use up extra starter. We all REALLY liked them. 1 egg, beaten. 1 T butter, melted (you can use oil instead, but butter makes them crispier). 1/2 - 1 tsp chopped, fresh chives. 1/2 - 1 T crumbled bacon. 1/4 cup shredded cheese (I like cheddar jack). 1 tsp baking soda. Stir the egg and butter into the starter. Then stir in the chives, bacon and cheese. Cook on hot waffle iron until golden. Serve right away.
